New MEBAK chapter: Microbiology

At BRAUBEVIALE 2024, the Central European Brewing Technology Analysis Commission (MEBAK) e.V. has announced the “Microbiology” chapter - a comprehensive collection of microbiological methods for the brewing and beverage industry.

It includes over 95 tried-and-tested analysis methods, which are continuously being expanded. The chapter covers raw materials, intermediate and end products such as beer, beer-based mixed drinks, mineral water and non-alcoholic beverages and contains valuable background information on microorganisms, laboratory equipment and the legal framework.

The detailed overview of setting up microbiological laboratories, including requirements for premises, equipment and consumables, is particularly helpful. Practical methods for operational control focus on microbial contamination in water, wort, yeast, beer, air and production facilities and provide valuable guidelines for quality assurance.

One highlight is the M-421.22.515 method for testing filtered beer for beer spoiling bacteria using membrane filtration. These and other methods are available in the MEBAK method database. You can find a free sample here: To the method.

The chapter not only supports quality assurance, but also serves as teaching material for training and further education. Visit the MEBAK method database for more information and access to all methods.
